I have my To-Do list for the Easter Brunch.
My list contains an Egg Custard Pie, A Pasta Salad, Asparagus in Puff Pastry and an Apricot Cheese Danish. This is a small list of the things that will be on the buffet. Ham, Kielbasa, Easter rolls, scalloped potatoes, pierogis, a lamb made of butter and more. We will have a festive bunch of approximately 20 people.
I have seen these birds nests for many years and never made them. This is the year! I think they turned out cute! I used a secret ingredient to make them more healthy, they called for chow mein noodles but I used Fiber One cereal! The recipe is below.
The dough is rising for the apricot danishes. I am excited to try all of these things. The Coup de Gras is the traditional Egg Custard Pie. I adore egg custard. My son-in-laws Grandma used to make it every Easter and I am happy to carry on the tradition.
I can't wait to see the kids in their frenzy to find treasures in the yard (we don't do much chocolate in Arizona!)

Birds Nest Treats
4 tbls
butter
3 tbls peanut
butter (I use crunchy)
1 bag of
mini marshmallows (approx. 5 cups)
1 bag of
Fiber One Cereal (it comes in the box
with 2 bags) (approx.. 4 cups)
1 bag of your
favorite easter egg candy (M&M eggs, jelly beans, malted milk eggs, etc).
Melt the
butter and peanut butter in a large pot or Dutch oven, then add marshmallows. When melted together, stirring about 5
minutes, add the cereal and stir until coated.
Cover your
hands with oil and choose a small amount of the cereal mixture, roll into a
ball and indent the center, immediately inserting a candy or two. THIS WILL BE HOT, CAREFUL! I use parchment paper on a cookie sheet or
the counter to place them until they cool.
If the mixture
begins to harden, place it back on the stove on low heat for a few minutes.
